Serves 2
Ingredients:
2 x 90g Soba Noodles
2 Eggs
1/2 Cup Shiitake Mushrooms
1 Cup Leafy Greens (Kale, Collard, Chinese Broccoli, Asian Greens)
250g Firm Tofu (See Marinade below, 30 minutes)
Tofu Marinade
5-6 Fresh Chilis
2 tsp Mirin
Cilantro
1 pinch Salt
1 Tbs Olive Oil
2 tsp Garlic
2 Tbs Rice Wine (or dry white wine)
Broth
2 tsp Garlic
2 Tbs Chili Oil (my recipe in a coming post )
2-3 Tbs miso paste
4 cups Water
1.5 cubes Vege stock
1 Tbs Sesame Oil
Garnish
Dried Onions
Chili Flakes
Sesame Seeds
Spring Onion
Step 1. Marinade the tofu, soak the mushrooms, and toast the sesame seeds:
TOFU
1. Slice the tofu into 1 inch cubes
2. Mix the cubed tofu with the Marinade ingredients in a reusable food bag or Ziploc bag, if you don’t care about the environment
3. Shake it up good and let it sit for 30-ish minutes
MUSHROOMS
1. Soak the dried shiitake mushrooms in warm water to soften, if you have fresh ones obviously skip this step
SESAME SEEDS
1. Heat a dry skillet and add some sesame seeds
2. Toss in pan until fragrant and browned (careful not to burn!)
3. Remove from pan to cool down
Step 2… Making the broth and boiling the eggs:
BROTH
1. Drizzle some olive oil in the bottom of a medium pot and fry the garlic
2. Once fragrant add water, vegetable stock cubes, and miso paste
3. Stir until everything has dissolved then add the sesame oil and chili oil
(We will use the broth to boil the eggs to conserve time and space)
EGGS
1. Bring the broth to a boil then add in the eggs
2. Start your timer for 6 minutes for the PERFECT soft boiled egg
3. Cover it and turn off the flame
4. Prepare an ice bath for the eggs when the timer is finished
5. When the timer goes off move the eggs from the broth to the ice bath until we are ready to peel and slice them
Step 3… Soba and Tofu:
SOBA
1. Boil the soba noodles according to package directions
2. When done, run under cold water in a strainer so they do not stick together
TOFU
1. Drizzle some olive oil in a skillet and heat on high
2. When it is hot add the tofu and marinade
3. Cook until the marinade evaporates
4. Turn the tofu as necessary so it created nicely charred sides
Step 4… Plating the noods:
1. Chop the leafy greens to big (but also biteable) pieces
2. Slice the shiitake mushrooms
3. Peel and slice the eggs in half
4. Bring the broth back to a boil
5. In the bottom of a bowl add the soba noodles, leafy greens, shiitake mushrooms, and charred tofu… make it look pretty!
6. When the broth is boiling again, pour the steamy hot broth over the ingredients in the bowl
7. Carefully place the sliced egg with the yolk facing up
Step 5… Garnish over the top with:
1. Sesame Seeds, Dried Onions, Chili Flakes, and Spring Onions
However much you want!
